Hari Minggu

After reading (or browsing?) some weekly newspapers, I begin to think of the meal I should prepare for lunch even though I don't feel like cooking. There is the school work load that I have to attend to, but I don't feel like doing it either. Time to laze around, I guess, but oh I feel guilty!

So I browse the kitchen shelf. There is a can of carbonara sauce. The girls don't like it. It is a mistake to buy it during one of our grocery shopping trip. Yesterday I was thinking of making mac n cheese, like the one they have at Kenny Roger's outlet. But I ended up cooking sambal tumis udang and ikan pelaling goreng instead. Served with steaming hot rice, off course!

A few days ago, a friend of mine taught me how to prepare mac n cheese. Easy - melt the butter, add in cheddar cheese and toss in the cooked macaroni.

Well, there is no cheese in our fridge. So I drive to a nearby shop. It is a quiet Sunday. As it always is in my neighbourhood. A poem by A. Latiff Mohidin, entitled Hari Minggu comes to my mind:

Hari minggu
hari kelabu
tiang lampu

miring
satu persatu

I get the cheese. And carbonara.... what should I do with it? And there is a packet of mince chicken too in our freezer.

So here it goes:
Blend the onion, garlic and ginger. Heat a little oil, fry the onions until fragrant. Add in the mince chicken. When it is cooked, pour in the carbonara sauce. Sprinkle a dash of salt and pepper to your taste. Done.
Cook the macaroni. Add in a little bit of butter and salt. Drained.
Melt the butter. Add in the sliced cheddar cheese. Then add in a little of moza cheese.
Lastly mix the carbonara sauce, cooked mac and the melted cheese. Voila! Lunch in a jiffy!

The girls like it. And my carbonara don't go wasted. But to add colour and taste, sprinkle some parmeesan cheese and serve it with steamed brocolli and carrot.
